Something that never ceases to amaze me is the versatility of vegetables. I try to use the lesser-known ones too, mostly to show you what to do with them when you see them and to highlight their nutrition stats, but if all you can find where you live are the most basic of veggies, you can still make a huge variety of recipes.

Take a look at the vegetables used in this recipe. They’re just the everyday stuff found at the farmer’s market or any grocery store (where I live). But this soup tastes rich, exotic and nourishing, not at all like a yawning fridge.

Cream of Mushroom Soup with Wild Rice

This is one of the many recipes filling my freezer to the brim right now. I have actually never filled my own freezer with food, despite having done it for many others, and I have to admit, it’s pretty awesome.

Having a tiny baby has made me a meal preparing ninja. I was always pretty fast but now, I know my time is limited and there are other things that need to get done too, so I am quick and stealth and usually wearing all black (because that’s what colour my sweatpants are).

Smokey Black-eyed Pea Soup with Collard Greens

Every year we have done a new black-eyed pea recipe for good luck in the New Year. We didn’t invent the concept, but the idea of some good luck to kick off the New Year resonates with us, as it does with others around the world (and as the recipe creator, it’s fun to work with parameters sometimes).

I love how random it is that black-eyed peas are considered lucky. Not lentils or black beans, or mandarin oranges, leftover stuffing or tequila shots, but quirky, distinct, smooth but easy to forget about, black-eyed peas.

Carrot and Jalapeño Soup

Puréed soup rules. Nutritiously speaking, it is basically a cooked smoothie (so easier to digest) that can include the Allium family of veggies (onion, garlic etc) without freaking anyone out. There are definitely benefits to a raw, green smoothie that you don’t get from a cooked bowl of soup, but this soup definitely has its own thing going on that a green smoothie can’t touch.

Soup makes the perfect food for fall and winter. Look at every ingredient on the list for this recipe. Each one is something you have probably thought about eating more of while perhaps reaching for something more convenient instead. Whipping these ingredients up into this bright orange soup turns them into the healthiest and most convenient of convenience food.
