Hasselback-ed Sweet Potatoes with Kale Pesto

As Promised, a post dedicated to lung health! Whether you live in the city or an area prone to forest fires, you or someone you know smokes, or whether you are experiencing grief or sadness (more on that later), there are many reasons to want to consider the health of your lungs.

This site is dedicated to heath-promoting foods, so that is where we are going to start. There are many other factors when considering the health of our lungs though, so we are going to get a bit wild and branch out today.

Steamed Veggie & Quinoa Bowl with Garlic ‘Butter’

Steamed Veggie & Quinoa Bowl with Garlic 'Butter'

This recipe may win the prize for the simplest one on this site so far. It is simply steamed veggies with quinoa and melted coconut oil with garlic. Maybe this is why it took so long to make it onto the blog, I don’t know, do you really need a recipe for this? But then someone pointed out to me it’s not always about the recipe but the inspiration to make something. So I hope this inspires you, it really is worth the effort.

I have to admit, this isn’t something I make for us very often. I guess it’s humble enough to forget about by grocery list/dinner-making time. It’s inspired by a stall at the Granville Island Food Court that always sold salad rolls that my sisters and I would get for lunch when we were little (to go with our donut holes and pizza pretzels).

Grapefruit & Arugula Salad with Avocado & Fennel

Grapefruit & Arugula Salad with Avocado & Fennel

Just a quickie post this week highlighting the beautiful produce left in my fridge/on my counter at the end of my trip that I couldn’t bear to just turn into juice (my usual go-to clean out the fridge move). And, actually, it makes the best salad.

With the awesome farmers market close by and the citrus trees outside my window that no one else seems to be picking from (#humblebrag), it’s been really easy to eat lots of fresh, colourful produce on this trip. We’ve been cooking really simply, not because I don’t want to be cooking, it’s so fun to do here, but because simpler flavours seem to taste better when it’s 38 degrees and your baby has officially learned to sweat and stick to your body.

Fresh Chimichurri Sauce with Avocado Wedges

Fresh Chimichurri Sauce with Avocado Wedges

I am in the land of avocados, grapefruit and sunburns. I don’t even remember what rain feels like and we have been eating the freshest, most delicious produce and absolutely nothing that is reminiscent of our long chilly winter. Our little one felt weather-induced sweat for the first time (infant sweaty hair is the cutest) and the palm trees are waving to us like ‘welcome, we didn’t think you were going to make it this year!’ we weren’t sure either but we did, and does it ever feel good!

Whenever we have a kitchen on a vacation, I try to shoot a blog while we’re there because I find more culinary inspiration on vacation than any other time. So, I literally shot this yesterday while my little slept on her Dad and then we enjoyed it with some fresh grapefruit and then again for dinner drizzled on more avocados with some tomatoes, greens and roasted asparagus. Vacation should always taste this good.
