Cream of Mushroom Soup with Wild Rice

This is one of the many recipes filling my freezer to the brim right now. I have actually never filled my own freezer with food, despite having done it for many others, and I have to admit, it’s pretty awesome.

Having a tiny baby has made me a meal preparing ninja. I was always pretty fast but now, I know my time is limited and there are other things that need to get done too, so I am quick and stealth and usually wearing all black (because that’s what colour my sweatpants are).

Sweet Potato Avocado ‘Toast’

Sweet Potato Avocado Toast

At first I thought a smashed whole sweet potato was the answer, until I thought about eating an entire sweet potato for breakfast or a snack (they can be big!). Then I thought about my favourite avocado toast and how it’s usually more about the avocado than the toast (so that you can have 2). This should apply to sweet potato toast too then, right? So that’s how this sweet potato ‘toast’ came to be.

Sweet Potato Avocado Toast

Avocados and Sweet potatoes like each other a lot, flavour-wise. But did you know that the fat in the avocado actually helps to slow down the absorption rate of the sugar in the sweet potato into your body? Cancer cells want it fast, so it’s far better for your overall health to slooow it down. Sweet potatoes are already filled with a ton of fiber which also helps lower their glycemic load, so the two together, on top of tasting awesome, are truly a dream team.

Veggie Sushi Bowl

Veggie Donburi

This is the donburi I wish I could order in a Japanese restaurant. Sushi, at least in Vancouver, no longer means you have to order all you can eat farmed salmon and mercury-heavy tuna rolls (thank goodness). There are plenty of veg options (that contain actual vegetables) but the surprise tempura batter and probable GMO soy sauce still forces (inspires?) the re-creation of wistful dream orders at home (eg -our recipe for sugar-free Kale Gomae).

Veggie Donburi

Unlike when you eat sushi, this style of bowl encourages you to fill up on the veggies before you fill up on the rice. So in true crushing cancer form, the veggies become the priority and we treat the rest like the ‘garnish’.

Mushroom & Lentil Soup with Lemony Massaged Kale

You know it’s winter in Vancouver when you can’t find your raincoat or umbrella because they’re hanging in the shower, still not quite dry from the last time you used them. It’s the time of year that warm, hearty food is really appealing, the kind that lights a tiny furnace inside you. The kind that used to make you salivate as the smell drifted upstairs while you were (pretending to) do your homework. Enter this awesome soup.

Mushroom & Lentil Soup with Lemony Massaged Kale

My sister ordered a bowl of soup like this in a restaurant while I was visiting her in Amsterdam (PS –the Dutch do soup really well, I think it might be the antidote to their chilly, all-weather bike riding). It was simply called ‘lentil soup’ on the menu (at least the English version) but she gave me a taste and it was so rich and flavourful, but most interestingly, there was a nutty pop happening that totally worked. It came from toasted pine nuts –not as an expensive, toasty garnish, but stirred right into the soup.
