Radicchio Salad with Roasted Acorn Squash & Hazelnuts

My obsession with radicchio doesn’t appear to be going anywhere. Luckily, although she turns the colour of of one when she’s mad, my baby didn’t come out an actual radicchio, despite the amount that I ate while pregnant.

Besides its fresh, subtle bitterness, crisp lettuce-y texture and nostalgia it brings for the outdoor markets on the cobblestones of Rome, there’s another reason that we eat a lot of it in our house. It’s the same reason that versions of this salad and this salad happen an awful lot at our place too. Radicchio, despite its fragile-seeming texture, is robust and lasts for quite a while in your fridge.

Hearty Green Salad with Roots & Pickled Onions

Not that I’m here to tell you to eat salad in January. I really do prefer to look back fondly on a (somewhat) debaucherous December. I feel like that is what it is there for, and that soul food, laughter, togetherness and festivities all have their place in the grand scheme of things and are as good for us as salad, just on a different, sometimes harder to reach, level.

But sometimes your body will tell you exactly what it wants, and who would deny themselves an actual salad craving? Especially if you happen to be 37 weeks pregnant and your baby has been way too into French fries thus far. I nearly skipped (carefully on our iceberg-covered sidewalks) to the store to buy some leafy greens.

Sometimes I reeeeeally don’t’ feel like making dinner. When I’m by myself, that’s ok, lazy guacamole with veggies, almond butter on basically anything, a homemade jar of soup pulled from the freezer, or sometimes even just this (ridiculously good) Turmeric Popcorn to go along with the movie that my husband refuses to watch with me. It’s actually kind of awesome.

But when I’m cooking for more than just me, I know these options won’t fly and I can’t do delivery because it’s a grim scene in my neighbourhood. This salad was born out of those lazy nights, trying to disguise easy food as exciting and special food (it can definitely be both, sshhhhh).

Sweet roasted winter squash goes together with bitter greens like chocolate and peanut butter (high 5 if you made it through Halloween without at least one dirty little pb cup). They balance out each other’s decisive flavours and textures so well. This salad embraces all things naturally sweet and bitter plus the health benefits that come with both.

Warm Roasted Squash & Frisée Salad

Plain, roasted squash is a staple in my house this time of year. There is a different type for every day of the week and it goes with practically everything. And all of that orangey-yellow pigment means that it is full of carotenoids (anticancer pigment power) and that you are getting SO MUCH beta-carotene (that, if all goes well, your body will turn into vitamin A).
