Dandelion Greens Salad with Fresh Figs and Fennel

Dandelion Greens Salad with Fresh Figs and Fennel

We just got back from a very relaxing vacation. It was to a place we used to go with my Dad as kids. Not a thing has changed, our old Archie comics were still boxed up in the attic, the spinning clothes line where we used hang our stuffed animals and pretend they were on a carnival ride is still there, and the kitchen stool that my three sisters and I would stack onto for our annual picture had had a fresh coat of paint but was still there too.

It was amazing, I felt like I was eight again (until I had to clean my daughter’s first poo explosion with the actual antique washing equipment and hang it on the carnival ride to dry –my stuffed animals def never did that).

Steamed Veggie & Quinoa Bowl with Garlic ‘Butter’

Steamed Veggie & Quinoa Bowl with Garlic 'Butter'

This recipe may win the prize for the simplest one on this site so far. It is simply steamed veggies with quinoa and melted coconut oil with garlic. Maybe this is why it took so long to make it onto the blog, I don’t know, do you really need a recipe for this? I have to admit, this isn’t something I make for us very often. I guess it’s humble enough to forget about by grocery list/dinner-making time. Oven-Baked Quinoa with Pizza Toppings

The first thing you need to know about this dish is it tastes like pizza. For real. I’m not that person who doesn’t really eat pizza so I don’t remember what it actually tastes like. I eat pizza, I remember pizza and this tastes like pizza.

I can’t say what it specifically is about this that gives it the pizza vibe besides just the combo of fresh and dry spices and the tomatoes and artichokes (some of my fave toppings), but you’ll just have to trust me and try it out yourself. (more…)

Garlicky Kale & Spaghetti Squash ‘Pasta’

Garlicky Kale and Spaghetti Squash Pasta

As soon as the weather changes, all I want is pasta, and I know I’m not alone. This is my go-to when there isn’t very much in the house, because there is always kale (because green smoothies) and garlic.

Garlicky Kale and Spaghetti Squash Pasta

Unlike Zucchini Noodles (which would work in this recipe too), spaghetti squash is carb-y tasting and gives you that cozy fall leaves and crisp air satisfaction that our sweaty summer selves totally forgot about. You also don’t need any special equipment to turn it into noodles, Mother Nature, for some strange but awesome reason, has done the work for us.
