Leafy Greek Salad with Marinated Almonds

This salad is one of those recipes that really fills the hunger void, tastes like you spent time on it but actually requires very little time or effort. And it represents the new (or at least current) me. My almost 7-month-old is everything you could ask for in a baby, except for the fact that she is taking an extended sleeping hiatus.

She is fine with it, not grumpy or eye-rubby (unlike myself who looks like a (suntanned) 175-year-dead zombie these days). But no matter how sleepy she is going down, every time I put her into her crib to sleep, day or night, she opens her eyes, smiles so big her face looks like it’s going to turn inside out and then she does the horizontal running man. It’s so cute, it makes me laugh every time, even though I’m crying (and very possibly sleeping) inside.

Roasted Summer Potluck Veggies with White Beans

If you’ve ever been to a steakhouse and aren’t a steak person, you’ve probably noticed that the veggies are an afterthought. Under/over-seasoned, under/overcooked, generally unattended to and unloved. I don’t know if this is because they assume nobody eats them anyway, but if you’re only really eating the veggies, it’s not that cool. And even if you’re there for the steak, why should the guys it’s sharing a plate with be overlooked, especially with all of the menu brags that the steak quality gets?

I think about food too much, but I do still think this is a strange oversight. And I’m definitely not telling you to go to a steakhouse; I’m actually hoping to show you how to show up to a friendly, omnivorous bbq without being the guy who brought the hummus.

Fresh Chimichurri Sauce with Avocado Wedges

I am in the land of avocados, grapefruit and sunburns. I don’t even remember what rain feels like and we have been eating the freshest, most delicious produce and absolutely nothing that is reminiscent of our long chilly winter. Our little one felt weather-induced sweat for the first time (infant sweaty hair is the cutest) and the palm trees are waving to us like ‘welcome, we didn’t think you were going to make it this year!’ we weren’t sure either but we did, and does it ever feel good!

Whenever we have a kitchen on a vacation, I try to shoot a blog while we’re there because I find more culinary inspiration on vacation than any other time. So, I literally shot this yesterday while my little slept on her Dad and then we enjoyed it with some fresh grapefruit and then again for dinner drizzled on more avocados with some tomatoes, greens and roasted asparagus. Vacation should always taste this good.

Oven-Baked Quinoa with Pizza Toppings

The first thing you need to know about this dish is it tastes like pizza. For real. I’m not that person who doesn’t really eat pizza so I don’t remember what it actually tastes like. I eat pizza, I remember pizza and this tastes like pizza.

I can’t say what it specifically is about this that gives it the pizza vibe besides just the combo of fresh and dry spices and the tomatoes and artichokes (some of my fave toppings), but you’ll just have to trust me and try it out yourself. (more…)
