Lemon Blueberry Overnight Chia Oats

I bought ten pounds of unsprayed blueberries this week from a local farm. I had to drive to pick them up, there were that many. I have frozen some and dehydrated some, but still, we have eaten so many blueberries in this house over the last few days, that we will probably sprout anthocyanin-coloured superfood wings, or turn into that rolly poly blueberry girl from Charlie and the Chocolate Factory. Or at least be sufficiently sick of them by the end of the season.

Blueberries aren’t too terribly sweet, they are filled with fiber and pectin and help to balance out digestion (whether things are running too slow or too fast) (which kind of seems like intuitive fruit magic to me). They are actually good for your urinary tract too and help to counter UTIs (and are way easier to eat than cranberries!).

I have been trying to get this recipe up on the blog for a really long time now. It is the picture of disease-prevention, anti-inflammation and immune support. Now that we’re in that post-holiday, new habit-creating time, it seems like the perfect time to introduce my version of the mighty, mighty ‘golden milk’.

We talk about (and use) turmeric a lot on this site, golden milk’s ‘golden’ ingredient. It is one of the most studied and proven anticancer spices in terms of its ability to lower inflammation, support the liver, aid digestion and boost the immune system.

Nut Milk - the basics

The first time I tasted homemade almond milk, I was surprised on so many levels. I couldn’t believe how pleasantly rich it was or how much it tasted like actual almonds (not sure what I thought it would taste like). I still can’t believe how easy it is to make, and how many different nuts and seeds can be made into rich and nutritious milk-resembling substances. Besides its awesome nutrition specs, it is vegan, free of the additives found in the store-bought versions, a functional cow’s milk replacement and delicious in its own right.

Other nuts make great nut milks too, so be creative and mix it up in order to change up the different nutrients you are getting. The fattier the nut, the fattier the milk (walnuts, pecans, cashews), although you can thin it out with extra water. (more…)
