Roasted Summer Potluck Veggies with White Beans

Roasted Summer Potluck Veggies with White Beans

If you’ve ever been to a steakhouse and aren’t a steak person, you’ve probably noticed that the veggies are an afterthought. Under/over-seasoned, under/overcooked, generally unattended to and unloved. I don’t know if this is because they assume nobody eats them anyway, but if you’re only really eating the veggies, it’s not that cool. Plant-based ‘Escargot’ with Butter Lettuce Salad and Chickpea Pancakes

I’m so excited, I’ve wanted to do a post for Bastille Day (July 14th) since starting this blog but have never gotten it together until this year.

Having a tiny baby has made me a meal preparing ninja. I was always pretty fast but now, I know my time is limited and there are other things that need to get done too, so I am quick and stealth and usually wearing all black (because that’s what colour my sweatpants are).

Mushroom Lentil Burger

I think it is time for a new burger recipe. I have to be honest, these days I make burgers when I don’t feel like eating salad or raw veggies, to force myself to eat some greens. I wrap them in not one but two collard greens, fill them with more veggies, sauerkraut and some Eggplant Mayo, and the greens practically eat themselves.

Not that this needs to be your reason to make these burgers, you can also just feel like a good burger, because these really are. I’ve been making a version of these for years, and it all started when I was cooking for a client who didn’t like veggies, really loved meat (a lot) but wanted to eat vegan.
