There is this little Lebanese restaurant near me that serves the best, clean, colourful delicious food. Every time we go, I feel inspired and tingly, surrounded by all of the lemon, parsley and tomatoes.

Buckwheat Fatoush with Hummus

We tend to always order the same things to share, and one of those things is the fatoush salad. This is a simple Mediterranean salad, often with cucumber and tomatoes and the key ingredient is some kind of bread. Not little croutons, but perhaps day-old, big hunks of actual bread (or in this case pita) that absorb the excess salad dressing making the salad as satisfying as a big Italian sandwich.

I often order from the ‘sides’ part of the menu when I go out for dinner. That’s where you usually find the good guys (and the French fries…); sautéed spinach, roasted carrots, green beans, Brussels sprouts etc.

What I wish though, was that more restaurants (and not just the healthy and/or plant-based ones) gave these simple veggie sides the muscle to help them stand alone as main courses. Some roasted chickpeas, an ancient whole grain, something to help it all stick a little better.

Sweet Potato Avocado ‘Toast’

Sweet Potato Avocado Toast

At first I thought a smashed whole sweet potato was the answer, until I thought about eating an entire sweet potato for breakfast or a snack (they can be big!). Then I thought about my favourite avocado toast and how it’s usually more about the avocado than the toast (so that you can have 2). This should apply to sweet potato toast too then, right? So that’s how this sweet potato ‘toast’ came to be.

Avocados and Sweet potatoes like each other a lot, flavour-wise. But did you know that the fat in the avocado actually helps to slow down the absorption rate of the sugar in the sweet potato into your body? Cancer cells want it fast, so it’s far better for your overall health to slooow it down. Sweet potatoes are already filled with a ton of fiber which also helps lower their glycemic load, so the two together, on top of tasting awesome, are truly a dream team.

When they’re in season, tomatoes rarely make it into a salad at my house, let alone into more complicated recipes. They taste so good, they disappear from the counter before I can count on them for dinner or any other future concept. I actually had to buy these tomatoes twice before I was able to make this recipe, I kept turning around and they were gone.
