Hi! You may (or may not) have noticed we disappeared for a few weeks. My excuse is boring and kind of gross but it feels great to be back, I’ve missed you all.

Remember the Game of Thrones Season Finale? It seems like it was a long time ago now. We recorded it because we had people for dinner and then stayed up to watch it after they left. It was past our bedtime (any time after 9pm, these days) so between the two of us falling asleep and rewinding it to re-watch parts, it took us about three hours to watch.

Veggie Paella

Veggie Paella

I listened to a podcast recently, a recording of a Lucky Peach event called ‘Eating Out Loud’. Just like the magazine, it was creative, hysterically funny, artistic, irreverent and at times, totally bizarre. Different people spoke/sang/told stories, including Chef David Chang, one of the founders of the magazine (and of Momofuku Restaurant Group and other awesome foodie things).

Veggie Paella

I love him. I loved watching him on Mind of a Chef, I love his passionate but self-deprecating articles in Lucky Peach, I’m totally a fan. Which is why in this podcast, when he referred to paella as ‘the most overrated food in the history of the world’ I had to do the 15 second rewind to make sure I had heard him correctly. It’s not like I share his food philosophy in general, but this still surprised me. Paella?!

In case you are like me and have cravings for Indonesian peanut noodles a little more than you would like to admit, I wanted to share a version with you that leaves you feeling energized and smugly vegetablized instead of Netflix zomb-ified.

Indonesian Butternut Squash Noodles with Veggies

The first and most important thing we do is make it more about the veggies than the noodles (good life advice too). Then we remove the peanut butter (sad face, I know, but pb -even organic -contains aflotoxin, a known carcinogen produced by mold) (I still eat it once in a while when accompanied by chocolate, because I’m human) and replace it with pumpkin seed butter (or sunflower seed or almond) (you won’t miss the peanut butter, I promise).

The inspiration for these pancakes comes from those Chinese green onion pancakes. If you’re like me, you might have tried them before and wondered why they tasted so good, Googled them, read their ingredients, and then decided that maybe they should fall onto the once in a while and hopefully not that often list.

Gluten free Asian Pancake with Cucumber Sesame Salad

Although they are inspired by them, these pancakes are not the same. In fact they might only have green onions in common, which is not a bad starting point for a freaking delicious savory pancake.
