Whole Roasted Cauliflower with Curried Red Lentils

Whole Roasted Cauliflower in Lentil Curry

I just got home from a sunny few days in San Francisco where we climbed hills, ate all of the green food (there is seemingly a creative salad/cold-pressed green juice on every corner), watched the pelicans, climbed more hills, talked about how much harder it is to climb these hills while 30 WEEKS PREGNANT (that was mostly me) and ate more food.

Whole Roasted Cauliflower in Lentil Curry

It is one of my favourite cities and we had the best time. A small part of me considered faking early labour so that we could stay a little bit longer (I once faked a broken leg as a kid to get out of a slow day in ski camp, I’m sort of that person).

Portobello Mushroom Curry with Fresh Beet & Daikon

Portobello Mushroom Curry

This recipe is based on a legendary dish from one of my favourite places in Vancouver.

Vikram Vij and his wife, Chef Meeru Dhalwala, have a sidekick restaurant to their hugely popular Indian meets the Pacific Northwest restaurant ‘Vij’s’ (a giant lineup away from an exotic and comforting good time). It’s called ‘Rangoli’.

Every Sunday night, Vikram and Meeru used to come into a French restaurant where I used to work, and request a vegetarian menu. It just happened to be that Sundays were the nights that only the women in the kitchen were working (we used to joke that it was Lileth Fair night). We loved the challenge of putting together something special for them with the ingredients that we had each week, and it became something we looked forward to.

Indian Cauliflower Curry

You guys are going to want to make this. It has everything in it to keep your body busting with health and wellness and spices to keep you warm against the draft of the leaves falling off of the trees. It tastes like the opposite of last week’s (Canadian) thanksgiving dinner (and leftovers) too, an exotic journey in the other direction.

Classically, butter chicken is made with cream and sometimes actual butter, so it makes sense that it was always my fave, it’s basically French food with a charming Indian accent. This dish is inspired by butter chicken but I have changed enough of its components that I don’t think I can get away with calling it butter cauliflower. It is still sort of butter cauliflower though.

Indian-Spiced Creamy Kale with Rutabaga

This week’s recipe stems from putting my foot down last week. Has anyone seen the Planet of the Apes 1? Pretty creepy, right? Did anyone’s spouse try to talk them into seeing the second one (in theatre, no less!)? Well, mine did. He will see any movie marketed towards males, which means that I wind up seeing a lot of them too. Growing up in a house full of girls, I hadn’t seen most shoot’em ups until I was more than old enough to know it was all pretend. Don’t worry though, thanks to my husband, I have been making up for lost time, and have now seen almost every worthwhile (and not so worthwhile) gun-infused/sci-fi weirdness movie spanning the last several decades, and am so much smarter for it ☺

I read the book The Hundred-Foot Journey a few years ago and was excited when I heard they were going to turn it into a movie (it is all about cooking and food and is sooo visual!). After somehow manipulating my husband into seeing this instead of the talking, giant apes taking over the world part 2, we sat through 122 minutes of mouth watering French and Indian food, coming alive on screen. I’m still drooling just thinking about it. Somehow, we both enjoyed it immensely and were inspired to throw our previous dinner plans out the window and go to our favourite casual Indian restaurant for dinner. And cook Indian-style food for the rest of the week…
