Dandelion Greens Salad with Fresh Figs and Fennel

We just got back from a very relaxing vacation. It was to a place we used to go with my Dad as kids. Not a thing has changed, our old Archie comics were still boxed up in the attic, the spinning clothes line where we used hang our stuffed animals and pretend they were on a carnival ride is still there, and the kitchen stool that my three sisters and I would stack onto for our annual picture had had a fresh coat of paint but was still there too.

It was amazing, I felt like I was eight again (until I had to clean my daughter’s first poo explosion with the actual antique washing equipment and hang it on the carnival ride to dry –my stuffed animals def never did that).

High Fiber ‘Jam’ (& Thumbprint Cookies!)

Whether your digestion is on the sluggish side thanks to painkillers or chemo drugs or whether you’re pregnant and your digestion has become a shadow of its former self, this jam is here to the rescue.

Lovingly referred to as poo jam in my family, this is always on the menu for my cancer thriving clients (and was a staple in my house throughout my pregnancy). Sometimes I even make it for fun, just because it tastes so good (it reminds me of fig newtons).

Homemade Muesli

My husband makes the world’s best oatmeal. He makes it about once a year, and I’ve never paid attention to or asked how he makes it. I’m not sure if it’s because I’m afraid if I look too closely it will disappear (like a rainbow?) or if I’m just into mysteries. Maybe both.

Usually, I’m not really an oatmeal person. I know that it is a good option at the greasy spoon and that oats are good at keeping us warm and are high in protein and fiber, but has anything ever been more boring than oatmeal? If it takes brown sugar or maple syrup to make you go ‘mmmmmmm’, I don’t think that oatmeal can really take the credit.
