Dandelion Greens Salad with Fresh Figs and Fennel

We just got back from a very relaxing vacation. It was to a place we used to go with my Dad as kids. Not a thing has changed, our old Archie comics were still boxed up in the attic, the spinning clothes line where we used hang our stuffed animals and pretend they were on a carnival ride is still there, and the kitchen stool that my three sisters and I would stack onto for our annual picture had had a fresh coat of paint but was still there too.

It was amazing, I felt like I was eight again (until I had to clean my daughter’s first poo explosion with the actual antique washing equipment and hang it on the carnival ride to dry –my stuffed animals def never did that).

Hearty Green Salad with Roots & Pickled Onions

Not that I’m here to tell you to eat salad in January. I really do prefer to look back fondly on a (somewhat) debaucherous December. I feel like that is what it is there for, and that soul food, laughter, togetherness and festivities all have their place in the grand scheme of things and are as good for us as salad, just on a different, sometimes harder to reach, level.

But sometimes your body will tell you exactly what it wants, and who would deny themselves an actual salad craving? Especially if you happen to be 37 weeks pregnant and your baby has been way too into French fries thus far. I nearly skipped (carefully on our iceberg-covered sidewalks) to the store to buy some leafy greens.

Sweet Potato Avocado ‘Toast’

Sweet Potato Avocado Toast

At first I thought a smashed whole sweet potato was the answer, until I thought about eating an entire sweet potato for breakfast or a snack (they can be big!). Then I thought about my favourite avocado toast and how it’s usually more about the avocado than the toast (so that you can have 2). This should apply to sweet potato toast too then, right? So that’s how this sweet potato ‘toast’ came to be.

Sweet Potato Avocado Toast

Avocados and Sweet potatoes like each other a lot, flavour-wise. But did you know that the fat in the avocado actually helps to slow down the absorption rate of the sugar in the sweet potato into your body? Cancer cells want it fast, so it’s far better for your overall health to slooow it down. Sweet potatoes are already filled with a ton of fiber which also helps lower their glycemic load, so the two together, on top of tasting awesome, are truly a dream team.

Quinoa Salad with Dandelion Greens and Dill

This salad was the all time favourite of a client who I cooked for for many years. She was very low maintenance thanks to the fact that she really loved all food and also because she wanted this same salad at least once a week. I haven’t been able to look at it for years (I got pretty sick of it) but I was thinking about it the other day and thought I’d give it another try.

Quinoa Salad with Dandelion Greens and Dill

It brought back lots of memories (as food can really do) and I remembered why it got so much love in the first place. Its flavours are well balanced (bitter greens with sweet potatoes and fresh, grassy dill), it is hearty (protein-rich quinoa, beefy broccoli and fatty almonds) and it’s easy to take with you as a snack or lunch on your way out the door, or wrap up in a collard with some avocado (how I judge the merits of all grain-based salads).
