Hearty Green Salad with Roots & Pickled Onions

Not that I’m here to tell you to eat salad in January. I really do prefer to look back fondly on a (somewhat) debaucherous December. I feel like that is what it is there for, and that soul food, laughter, togetherness and festivities all have their place in the grand scheme of things and are as good for us as salad, just on a different, sometimes harder to reach, level.

But sometimes your body will tell you exactly what it wants, and who would deny themselves an actual salad craving? Especially if you happen to be 37 weeks pregnant and your baby has been way too into French fries thus far. I nearly skipped (carefully on our iceberg-covered sidewalks) to the store to buy some leafy greens.

Dill Pickle Kale Chips

In case you haven’t guessed by the recipe this week, I’m pregnant. Like actually very pregnant, I don’t know how time has flown by so quickly, but we are already six months along. It is really exciting news for us, and appropriate that this post happens to land on (Canadian) Thanksgiving.

I feel very lucky and beyond some nausea in the first trimester and worrying that I may never feel like cooking ever again, (and being SO EXCITED, that it’s hard to focus on anything else) it’s been a good pregnancy so far.

Stuffing flavoured KALE CHIPS!

Stuffing Flavoured Kale Chips

For several reasons, I have come to believe that kale chips might be the best holiday food:

1.) We are all rushing around during this time of year and can forget to think about ourselves and the grocery shopping we need to do, leading to eating the peppermint bark that a client/friend gave us for breakfast, lunch and possibly dinner (and dessert).

2.) It’s a little chilly to get enthusiastic over our beloved green smoothies.

3.) Unlike fresh veggies, we can store bags of kale chips in our cupboards/purse/car/winter coat pockets so that we always have green veggies around for when we realize we haven’t eaten and start thinking about that peppermint bark on our counter at home.

Kale Chips

By now we have all heard of kale chips, if not tasted them, tried making them ourselves or gasped at their high price tag at the grocery store. The first time I ever heard of them, was when I spotted them in a health food store in Southern California. I read the ingredients, bought them, took them home, shared one, possibly two, ate the rest, read the ingredients again and went back and bought more. It went on like this for the duration of my vacation, and by the end of the week, I was certain my insides were green because my teeth certainly were, and I had ordered a food dehydrator on-line (for about the same price as my week-long kale chip-a-thon had cost me) to meet me at home for some fun experimenting.

It took some trial and error but eventually I figured out a basic recipe that could be enjoyed as is, or swung in other directions with some different herbs and spices.
