Roasted Chickpea & Eggplant Tabouli

The other day I put my 8 week old in her carrier in the hopes of shooting this salad. I had it all planned out, she got in, she fell asleep, everything was perfect until I then just walked around my apartment, kissing her head, taking pictures to send my husband (I know. she has her own drop box account…). Before I knew it, 45 minutes had passed and by the time I got it together she had woken up again and wanted to party. So we did.

Enter my Mother-in-law. She was visiting and wanted nothing more than uninterrupted playtime with her new granddaughter. This blog post (and our lunch) would not have happened without her.

There is this little Lebanese restaurant near me that serves the best, clean, colourful delicious food. Every time we go, I feel inspired and tingly, surrounded by all of the lemon, parsley and tomatoes.

Buckwheat Fatoush with Hummus

We tend to always order the same things to share, and one of those things is the fatoush salad. This is a simple Mediterranean salad, often with cucumber and tomatoes and the key ingredient is some kind of bread. Not little croutons, but perhaps day-old, big hunks of actual bread (or in this case pita) that absorb the excess salad dressing making the salad as satisfying as a big Italian sandwich.

I have always known that fennel was great for digestion, but it wasn’t until the last few years that I learned it was anti-carcinogenic (anticancer) too. This is mostly due to its high levels of quercetin, a flavonoid (plant pigment) that is also useful in seasonal allergy relief.

If anyone else shares a home/bed with someone with sneeze-heavy seasonal allergies that you respond to with polite ‘bless you’ s in February that escalate to less polite ‘OMG, you need to shut up!’ s in March and April, you’ll understand that this isn’t as important as fighting cancer but it’s certainly not not important either. With fennel, we don’t have to choose, we can fight cancer and allergies at the same time.

Indian Cauliflower Curry

You guys are going to want to make this. It has everything in it to keep your body busting with health and wellness and spices to keep you warm against the draft of the leaves falling off of the trees. It tastes like the opposite of last week’s (Canadian) thanksgiving dinner (and leftovers) too, an exotic journey in the other direction.

Classically, butter chicken is made with cream and sometimes actual butter, so it makes sense that it was always my fave, it’s basically French food with a charming Indian accent. This dish is inspired by butter chicken but I have changed enough of its components that I don’t think I can get away with calling it butter cauliflower. It is still sort of butter cauliflower though.
