Crunchy Vietnamese Jicama & Cabbage Salad with Grapefruit and Fresh Herbs

You will not really find this salad in Vietnam. This is the salad I wished was in Vietnam after I ate a bad grilled banana dessert and decided I would probably never eat (or travel) again. SOmething fresh and living and low on the food poisoning possibility scale.

I love Vietnamese food (and Vietnam! And the Vietnamese! So much!). I love the large amounts of greens and herbs and general freshness. I love how light and clean it all tastes. There would likely be ground pork and lots of fish sauce in this if it was more authentically Vietnamese, but this salad is just inspired by what I love about Vietnamese food.

Massaman Thai Curry

I still don’t know how we got this lucky, but the first time I tried Massaman curry was in Thailand, on a beach, made especially for us by a Thai woman who was too modest to call herself a Chef but too passionate not to offer to cook for us once we started talking about food.

We had been frequenting her tiny bar that had only three tables setup on the beach, every night around sunset. Slowly we got to know her and her husband and learned that they had just given up their restaurant in another part of the country and were running this tiny bar until they could figure out where to open up a new one.

Steamed Chili and Garlic Cabbage

The last time I was in New York City was also my first time ever. It was shortly after my Mom passed away and it had been her wish that the whole family go as sort of a celebration of her life. With 11 of us, including 2 babies, it took a great deal of organizing, back and forth emails, and reservations, navigating tastes, dress code, high chair availability, location proximity to hotel/show etc. It was really fun and memorable, but emotional for all of us and overall pretty stressful.

This past weekend we took another shot at it with no babies (except for the one rutabaga-sized stowaway in my belly), no boys, no reservations and no plans whatsoever. My three sisters and I were met by spring-like warmth, blue skies, a surprisingly well-located hotel and no pressure to see or do anything at all.

Avocado & Black Bean Salad

Sometimes I reeeeeally don’t’ feel like making dinner. When I’m by myself, that’s ok, lazy guacamole with veggies, almond butter on basically anything, a homemade jar of soup pulled from the freezer, or sometimes even just this (ridiculously good) Turmeric Popcorn to go along with the movie that my husband refuses to watch with me. It’s actually kind of awesome.

But when I’m cooking for more than just me, I know these options won’t fly and I can’t do delivery because it’s a grim scene in my neighbourhood. This salad was born out of those lazy nights, trying to disguise easy food as exciting and special food (it can definitely be both, sshhhhh).
