I was picking up my husband from work one of those very icy nights in January when you wonder why you’re anywhere but home. I left early (because Vancouver + snow = unpredictable everything) and got there a bit early. I was parked and listening to the CBC and they had one of those calm-voiced announcers on talking about a Danish word/concept called ‘Hygge’.

I had never heard of it before, but sitting in my chilly car, around dinnertime at about 40 weeks pregnant, they had my full attention. As it turns out I want to live in Denmark. Hygge is something that we don’t have a direct translation for let alone a word for in the English language. Roughly, it means ‘cozy’ but it’s more than that.

Spinach, Roasted Squash and Lentil Salad with Sundried Tomato and Tahini Dressing

Every once in a while, there is nothing like a big leafy green salad. Kale is usually my go-to green (original, I know) but it is a nutrient-dense crucifer and also tastes good on day two and three, it’s hard to argue with that. But every once in a while I need something juicier.

Spinach, Roasted Squash and Lentil Salad with Sundried Tomato and Tahini Dressing

I always forget about spinach (the kale of the 90’s). It is also a dark, leafy green (big nutrients), it still tastes good after an overnight fridge-wilt (because we commonly eat it cooked too, unlike most lettuces), and it tastes relatively mild. I’m not talking about boxes of pre-washed by a stranger baby spinach, I’m talking about full-grown heads of spinach that you have to chop and clean yourself. It’s so worth it, trust me, it’s far juicier and more flavourful. Save the boxed spinach for recipes like our Spinach and Artichoke Dip, or a convenient smoothie boost.

Indonesian Butternut Squash Noodles with Veggies

In case you are like me and have cravings for Indonesian peanut noodles a little more than you would like to admit, I wanted to share a version with you that leaves you feeling energized and smugly vegetablized instead of Netflix zomb-ified.

Indonesian Butternut Squash Noodles with Veggies

The first and most important thing we do is make it more about the veggies than the noodles (good life advice too). Then we remove the peanut butter (sad face, I know, but pb -even organic -contains aflotoxin, a known carcinogen produced by mold) (I still eat it once in a while when accompanied by chocolate, because I’m human) and replace it with pumpkin seed butter (or sunflower seed or almond) (you won’t miss the peanut butter, I promise).
