Roasted Tomato Sauce

I am writing after eating this actual meal for dinner for the third night in a row. All three times I was sitting at the counter while my baby sat across from me in her bumbo, eating the same thing. We both mmmmmm’d our way through it (actually I was the only mmmmm’er, which I do a lot of because it makes her laugh, but she loved it too).

I (we) enjoyed it so much that I am considering hitting up the Farmers Market again tomorrow for more tomatoes to make it for dinner when my husband comes home from his work trip. That’s how good this is.

I bought my first garlic press this week. It just seemed like the right thing to do after waving my cyber arms around enthusiastically about pulverized garlic and its health benefits a couple of weeks ago.

One of my Chef Instructors (1000 years ago) used to say that they were for housewives (she herself was/is a woman) but I now realize that most of my favourite cooks (and people!) are in fact housewives, so I am more than ready to embrace the garlic press. And nice to not have turmeric residue all over it when I want to use it (unlike my microplanes). So, in honour of earning my housewife wings, we are busting out a garlicky recipe this week to celebrate (don’t worry, you can tone down the garlic if this terrifies you).

Navy Bean, Artichoke & Olive Tapenade Dip

One thing I spend far too much time thinking about is how to coax more vegetables into our/other people’s/people with temporarily strange palates lives. I could probably speak French and Italian by now if I were to have put in the same amount of time and effort. But who needs to be understood in the countries of love when you can….eat more veggies?

Anyway, this dip is my latest obsession. I am now in my last week (hopefully?) of pregnancy and have been making up for the all but complete lack of vegetables in the first half of my pregnancy. That stretch of time brought me a deeper understanding of my clients who were going through treatment who only wanted beige food, but it also meant this baby got a lot more beige food than I was happy with (thank goodness for smoothies).

Oven-Baked Quinoa with Pizza Toppings

The first thing you need to know about this dish is it tastes like pizza. For real. I’m not that person who doesn’t really eat pizza so I don’t remember what it actually tastes like. I eat pizza, I remember pizza and this tastes like pizza.

I can’t say what it specifically is about this that gives it the pizza vibe besides just the combo of fresh and dry spices and the tomatoes and artichokes (some of my fave toppings), but you’ll just have to trust me and try it out yourself. (more…)
