Sweet Potato Avocado Toast

At first I thought a smashed whole sweet potato was the answer, until I thought about eating an entire sweet potato for breakfast or a snack (they can be big!). Then I thought about my favourite avocado toast and how it’s usually more about the avocado than the toast (so that you can have 2). This should apply to sweet potato toast too then, right? So that’s how this sweet potato ‘toast’ came to be.

Avocados and Sweet potatoes like each other a lot, flavour-wise. But did you know that the fat in the avocado actually helps to slow down the absorption rate of the sugar in the sweet potato into your body? Cancer cells want it fast, so it’s far better for your overall health to slooow it down. Sweet potatoes are already filled with a ton of fiber which also helps lower their glycemic load, so the two together, on top of tasting awesome, are truly a dream team.

Quinoa Salad with Green Veggies & Macadamia Nut Feta

This salad is full of all the stuff that you think about eating as you slice off another piece of buckwheat toast for your second meal of avo toast in one day. Even better, it’s the kind of thing that you can make once at the beginning of the week to guarantee yourself at least one solid meal every day that week. You can even make it the following week without getting tired of it by mixing up some of the ingredients.

Quinoa Salad with Green Veggies & Macadamia Nut Feta

Quinoa, the protein-rich non-grain is one of my faves. If soaked and cooked properly, it tastes neutral and has a really nice texture. Soaking it also makes it far easier to digest. If you think you’re not a quinoa fan, try cooking it this way, or take the time to make this recipe (it’s pretty straight forward), and you’ll change your mind. Switch it out for buckwheat or millet, if you need a change.

Green Asparagus Soup

Did you know in traditional French cooking, if you see the word ‘princesse’ in the name of the dish, you can usually assume there will be asparagus in it? For example Princess Omelette (Omelette Princesse) is an asparagus omelette.

I think it is because the asparagus tips look like small crowns. Regardless, I think they need to make a Disney movie about this, they could just call it Princess Movie (Filme Princesse). Imagine a bunch of little kids singing about asparagus, dressing up as asparagus for Halloween (or just everyday), and possibly asking for asparagus for dinner (‘Mommy, why does asparagus season have to be sooooo short?!’) I seriously think I’m onto something.

Artichoke & Asparagus Pasta with Butter Beans & Olives

At my house we have been eating a version of this ‘pasta’ every few days for the last few weeks. I don’t know if it’s the seasonal call from the artichokes (or the asparagus!) but something about it tastes very good right now.

It’s about this time of year that I regain my fresh artichoke processing skills and get reasonably fast again. It’s like any seasonal sport, after a year you might feel a little bit wobbly, but it always comes back after a bit of practice. If artichokes aren’t a sport you’ve tried yet, I encourage you to give them a shot. I have written instructions in the recipe section.
