Bircher Muesli with Apples & Dried Apricots

Serves: 2-3
- ½ c Rolled Oats (not quick oats)
- 1 Tbsp Hemp Hearts
- 1 Tbsp Chia Seeds
- 1 medium Apple (or Pear), grated
- 1 tsp Lemon Juice
- ¼ c dried Apricots (unsulphured)
- ½ tsp Cinnamon
- 1¼ c Almond Milk (or milk of your choice)
- Combine all ingredients and let sit for at least 6 hours (or overnight).
- Store in the fridge for up to two days.
