Tomato & Kale Salad with Garlicky Caper Dressing

Ingredients
Salad
  • 1 bunch Lacinato Kale, thinly sliced
  • 1 kg fresh Tomatoes, cut into large pieces
Dressing
  • 2 Garlic Cloves
  • 2 Tbsp Dulse
  • 2 Tbsp Capers
  • 1 tsp Mustard
  • 4 Tbsp Lemon Juice
  • 1 Lemon, zested
  • 4 Tbsp Extra Virgin Olive Oil
Instructions
  1. In a blender or using a stick blender, purée all of the ingredients together (season with sea(weed) salt if you need to).
  2. Toss together with the tomatoes and kale (sprinkle with plant-based parm) and serve immediately.
