Tomato & Kale Salad with Garlicky Caper Dressing

Serves: 4-6
- 1 bunch Lacinato Kale, thinly sliced
- 1 kg fresh Tomatoes, cut into large pieces
- 2 Garlic Cloves
- 2 Tbsp Dulse
- 2 Tbsp Capers
- 1 tsp Mustard
- 4 Tbsp Lemon Juice
- 1 Lemon, zested
- 4 Tbsp Extra Virgin Olive Oil
- In a blender or using a stick blender, purée all of the ingredients together (season with sea(weed) salt if you need to).
- Toss together with the tomatoes and kale (sprinkle with plant-based parm) and serve immediately.
