Spiced Almond Milk Chia Pudding with Fresh Fruit

Serves: 2-4
- 1 c Almonds, soaked overnight, drained & rinsed
- 8 Brazil nuts, soaked overnight, drained & rinsed
- 3 c Water
- 1 c Almond & Brazil nut milk (see above)
- 1 c Pear, ripe (or other seasonal fruit -cherries! peaches! raspberries!)
- ½ tsp Lemon Juice
- Pinch Cinnamon
- Pinch Cardamom
- Pinch Nutmeg
- 4 Tbsp Chia Seeds
- Blend the water and nuts in a blender for 1-2 minutes (high power blender) or 5-10 minutes (lazier blender).
- Strain through a nut milk bag, cheesecloth or a fine-mesh sieve.
- Reserve the pulp (freeze or dehydrate) for brilliant uses (smoothies).
- Back in the belnder, blend the milk, spices and pear until smooth.
- (Optional: warm gently in a bain marie, before adding the chia)
- Pour into a bowl and whisk in the chia seeds.
- Let sit for about 10 minutes until the seeds gel and the mixture thickens.
- Spoon on top of fresh fruit, top with buckwheat and hemp hearts for added texture.
