Oven-Baked Quinoa with Pizza Toppings

The first thing you need to know about this dish is it tastes like pizza. For real. I’m not that person who doesn’t really eat pizza so I don’t remember what it actually tastes like. I eat pizza, I remember pizza and this tastes like pizza.

I can’t say what it specifically is about this that gives it the pizza vibe besides just the combo of fresh and dry spices and the tomatoes and artichokes (some of my fave toppings), but you’ll just have to trust me and try it out yourself. (more…)

Holiday Lentil & Buckwheat Loaf

Not the sexiest name, I know, but trust me, it’s exactly what your holiday table is missing.

Have you ever spent holiday dinners eating Brussels sprouts, mashed potatoes and cranberry sauce? I have to admit, this sounds pretty good to me right now, but it is nice to have a thoughtful (non-turkey-shaped tofu disaster) addition to this for those who are on a health-conscious, plant-based path.

Even those who eat everything around the holidays will like this recipe (I mean, probably not my Dad, but like, most people who like food). It has all of the flavours of a traditional stuffing, has a good hearty texture and could even be served in place of stuffing without any song and dance.

Mushroom Lentil Burger

I think it is time for a new burger recipe. I have to be honest, these days I make burgers when I don’t feel like eating salad or raw veggies, to force myself to eat some greens. I wrap them in not one but two collard greens, fill them with more veggies, sauerkraut and some Eggplant Mayo, and the greens practically eat themselves.

Not that this needs to be your reason to make these burgers, you can also just feel like a good burger, because these really are. I’ve been making a version of these for years, and it all started when I was cooking for a client who didn’t like veggies, really loved meat (a lot) but wanted to eat vegan.

Veggie Paella

Veggie Paella

I listened to a podcast recently, a recording of a Lucky Peach event called ‘Eating Out Loud’. Just like the magazine, it was creative, hysterically funny, artistic, irreverent and at times, totally bizarre. Different people spoke/sang/told stories, including Chef David Chang, one of the founders of the magazine (and of Momofuku Restaurant Group and other awesome foodie things).

Veggie Paella

I love him. I loved watching him on Mind of a Chef, I love his passionate but self-deprecating articles in Lucky Peach, I’m totally a fan. Which is why in this podcast, when he referred to paella as ‘the most overrated food in the history of the world’ I had to do the 15 second rewind to make sure I had heard him correctly. It’s not like I share his food philosophy in general, but this still surprised me. Paella?!
