I can’t tell you how happy I am that this recipe translates so well to dairy-free. It’s a dish that my cousin (trained Chef and so much more) created and would put out as an appetizer around Christmas time when all of our families would get together. My Mom then started making it because we all loved it so much, so it now tastes, to me, like every fun family occasion.

I hadn’t thought about it in years, but suddenly it’s all I could think about. It’s a little bit retro now, it was born back when pine nuts were cool and sundried tomatoes were sort of new and fancy and everyone had a jar of those Costco ones in their fridge.

My husband and I came home from a mediocre work party one night in the fall of 2009 and spent the next day wondering how it was possible that we were so hung over. It turned out that we had swine flu and we spent the next several weeks quarantined to our tiny apartment watching every sci fi movie I had managed to avoid for the first several years of our relationship. To this day Star Wars still makes me feel nauseous.

During this same year, my Mom’s cancer had recurred and she was going through treatment again, and my older sister had had her first baby. I couldn’t see either of them for over a month and it was the worst.

When they’re in season, tomatoes rarely make it into a salad at my house, let alone into more complicated recipes. They taste so good, they disappear from the counter before I can count on them for dinner or any other future concept. I actually had to buy these tomatoes twice before I was able to make this recipe, I kept turning around and they were gone.

Fermented Coconut Yoghurt with Raw Peach Chia Jam

I lost my marbles when I made this yoghurt for the first time. I can’t tell you how many people I have cooked for who say that they know they should be avoiding dairy but they can’t seem to kick the yoghurt, is that ok?

There are living probiotics in dairy yoghurt, so that’s a good thing, but it is still dairy which is inflammatory (excessive inflammation promotes cancer growth, so we try to keep inflammatory foods to a minimum). I usually recommend chia pudding and if they look at me like I’m nuts and get a rebellious bacon and chocolate croissant for breakfast look in their eye, I say maybe a bit of goat yoghurt a couple of days a week to wean yourself off of it would be ok.
