Watermelon and Cucumber Salad with Coconut Yoghurt

I find it hard to make recipes using watermelon. It’s usually the first thing I cross off my shopping list when I realize I am buying too much to walk home with without having strangers asking me if I need help (so embarrassing). When I do manage to get one home, it’s delicious watermelon that needs no help beyond a sleepover in the fridge to make it pure, sweet, hydrating perfection. In other words, it gets eaten as is, and any thoughts of a recipe get put on hold, sometimes even until the following summer.

This summer has been a little bit different. Watermelon is very cooling and our bodies seem to know this instinctively, craving it when the weather gets warm. It’s hard to remember now, but the weather here was warm, even kind of hot at the beginning of the summer and the watermelon turnover was high. Over the last couple of weeks of sporadic rain, clouds and cool weather, I found we had a rare stockpile of watermelon (well, two).

Sweet Potato Avocado ‘Toast’

Sweet Potato Avocado Toast

At first I thought a smashed whole sweet potato was the answer, until I thought about eating an entire sweet potato for breakfast or a snack (they can be big!). Then I thought about my favourite avocado toast and how it’s usually more about the avocado than the toast (so that you can have 2). This should apply to sweet potato toast too then, right? So that’s how this sweet potato ‘toast’ came to be.

Avocados and Sweet potatoes like each other a lot, flavour-wise. But did you know that the fat in the avocado actually helps to slow down the absorption rate of the sugar in the sweet potato into your body? Cancer cells want it fast, so it’s far better for your overall health to slooow it down. Sweet potatoes are already filled with a ton of fiber which also helps lower their glycemic load, so the two together, on top of tasting awesome, are truly a dream team.

Do you ever feel like a glass or bottle of water has followed you around all day without ever actually being consumed? You know you should be drinking more water but for some reason actually drinking it never happens? This is really common, and eventually your body stops giving you strong thirst signals (unless you’re already quite dehydrated). The more you drink, the more water your body will ask for.

This applies to everyone (I personally can get very lazy in the water department), but if you’re going through cancer treatment, with all of its side effects, it can be extra challenging to stay hydrated.
