Sweet Potato Avocado Toast

At first I thought a smashed whole sweet potato was the answer, until I thought about eating an entire sweet potato for breakfast or a snack (they can be big!). Then I thought about my favourite avocado toast and how it’s usually more about the avocado than the toast (so that you can have 2). This should apply to sweet potato toast too then, right? So that’s how this sweet potato ‘toast’ came to be.

Sweet Potato Avocado Toast

Avocados and Sweet potatoes like each other a lot, flavour-wise. But did you know that the fat in the avocado actually helps to slow down the absorption rate of the sugar in the sweet potato into your body? Cancer cells want it fast, so it’s far better for your overall health to slooow it down. Sweet potatoes are already filled with a ton of fiber which also helps lower their glycemic load, so the two together, on top of tasting awesome, are truly a dream team.

Do you ever feel like a glass or bottle of water has followed you around all day without ever actually being consumed? You know you should be drinking more water but for some reason actually drinking it never happens? This is really common, and eventually your body stops giving you strong thirst signals (unless you’re already quite dehydrated). The more you drink, the more water your body will ask for.

This applies to everyone (I personally can get very lazy in the water department), but if you’re going through cancer treatment, with all of its side effects, it can be extra challenging to stay hydrated.

These cucumbers have been following me. A friend of mine posted a version on Instagram, which started my internal obsession, while another friend has been giving me the weekly heads up about mini cukes at our local Farmer’s market. I guess we all need some cooling down (one of cucumber’s finer talents).

One of my fave foodie mags, Bon Appétit is also on the cucumber train. They had a version of these cucumbers in a recent issue that caught my eye and got me excited. I love it when people are bold enough to colour outside the lines and throw caution to the wind (even if it’s in a safe, food-related way). Any time you can trade in fancy knife skills for the side of your rolling pin and call it fancy, I am SO in.

Sunflower Seed 'Tuna' Salad

Did anyone else grow up on tuna melts? Or tuna ‘bakes’ if you were in my family, which involved an English muffin base, simple tuna salad made with mayo, green onion and maybe fresh herbs, topped with a slice of orange cheddar and baked in the oven (or possibly the toaster oven). For my sisters and me, this was way up there on the list of awesome, comforting lunches. Dairy and wheat are usually the first things to exit the diet once we start to learn about our health, and shortly after that tuna, either for its mercury content or maybe because you are trying a plant-based diet. Bizarrely enough, tuna is the easiest of the three components of a tuna melt to re-create in a healthy and convincing way.
