Homemade Muesli

My husband makes the world’s best oatmeal. He makes it about once a year, and I’ve never paid attention to or asked how he makes it. I’m not sure if it’s because I’m afraid if I look too closely it will disappear (like a rainbow?) or if I’m just into mysteries. Maybe both.

Usually, I’m not really an oatmeal person. I know that it is a good option at the greasy spoon and that oats are good at keeping us warm and are high in protein and fiber, but has anything ever been more boring than oatmeal? If it takes brown sugar or maple syrup to make you go ‘mmmmmmm’, I don’t think that oatmeal can really take the credit.

Indian Cauliflower Curry

You guys are going to want to make this. It has everything in it to keep your body busting with health and wellness and spices to keep you warm against the draft of the leaves falling off of the trees. It tastes like the opposite of last week’s (Canadian) thanksgiving dinner (and leftovers) too, an exotic journey in the other direction.

Indian Cauliflower Curry

Classically, butter chicken is made with cream and sometimes actual butter, so it makes sense that it was always my fave, it’s basically French food with a charming Indian accent. This dish is inspired by butter chicken but I have changed enough of its components that I don’t think I can get away with calling it butter cauliflower. It is still sort of butter cauliflower though.

Fermented Coconut Yoghurt with Raw Peach Chia Jam

I lost my marbles when I made this yoghurt for the first time. I can’t tell you how many people I have cooked for who say that they know they should be avoiding dairy but they can’t seem to kick the yoghurt, is that ok?

There are living probiotics in dairy yoghurt, so that’s a good thing, but it is still dairy which is inflammatory (excessive inflammation promotes cancer growth, so we try to keep inflammatory foods to a minimum). I usually recommend chia pudding and if they look at me like I’m nuts and get a rebellious bacon and chocolate croissant for breakfast look in their eye, I say maybe a bit of goat yoghurt a couple of days a week to wean yourself off of it would be ok.

Homemade Coconut Butter (& Coconut Chocolate Fudge)

One of my favourite things is discovering that a specialty food item that I buy on a regular basis is actually really easy to make at home. It’s not just about saving money, it’s about being able to choose the base ingredients and having control over the processing variables too. Cleaner, fresher, less processed food is right up my alley, and the money saving thing is pretty awesome too.

Raw Chocolate Coconut Fudge

You may have heard of (or spent a lot of money buying) coconut butter (aka coconut manna). It is different from coconut oil, as it is made with the whole coconut flesh as opposed to being extracted from the coconut flesh. Physically, it is like the difference between puréed avocado and avocado oil.
