Hasselback-ed Sweet Potatoes with Garlicky Kale Pesto (+ Lung Health)

Hasselback-ed Sweet Potatoes with Kale Pesto

As Promised, a post dedicated to lung health! Whether you live in the city or an area prone to forest fires, you or someone you know smokes, or whether you are experiencing grief or sadness (more on that later), there are many reasons to want to consider the health of your lungs.

This site is dedicated to heath-promoting foods, so that is where we are going to start. There are many other factors when considering the health of our lungs though, so we are going to get a bit wild and branch out today.

Massaman Thai Curry

I still don’t know how we got this lucky, but the first time I tried Massaman curry was in Thailand, on a beach, made especially for us by a Thai woman who was too modest to call herself a Chef but too passionate not to offer to cook for us once we started talking about food.

Squash and Black-eyed Pea Chili

Squash and Black-eyed Pea Chili

I have made it with black-eyed peas, because some say that eating black-eyed peas on January 1st brings us good luck. I am willing to buy into anything that may bring some luck, especially if it will definitely bring the delicious (and feed a crowd/freeze well). I have another lucky black-eyed pea recipe here if you’re looking for options.
