Indonesian Butternut Squash Noodles with Veggies

In case you are like me and have cravings for Indonesian peanut noodles a little more than you would like to admit, I wanted to share a version with you that leaves you feeling energized and smugly vegetablized instead of Netflix zomb-ified.

Indonesian Butternut Squash Noodles with Veggies

The first and most important thing we do is make it more about the veggies than the noodles (good life advice too). Then we remove the peanut butter (sad face, I know, but pb -even organic -contains aflotoxin, a known carcinogen produced by mold) (I still eat it once in a while when accompanied by chocolate, because I’m human) and replace it with pumpkin seed butter (or sunflower seed or almond) (you won’t miss the peanut butter, I promise).

Quinoa Salad with Dandelion Greens and Dill

This salad was the all time favourite of a client who I cooked for for many years. She was very low maintenance thanks to the fact that she really loved all food and also because she wanted this same salad at least once a week. I haven’t been able to look at it for years (I got pretty sick of it) but I was thinking about it the other day and thought I’d give it another try.

Quinoa Salad with Dandelion Greens and Dill

It brought back lots of memories (as food can really do) and I remembered why it got so much love in the first place. Its flavours are well balanced (bitter greens with sweet potatoes and fresh, grassy dill), it is hearty (protein-rich quinoa, beefy broccoli and fatty almonds) and it’s easy to take with you as a snack or lunch on your way out the door, or wrap up in a collard with some avocado (how I judge the merits of all grain-based salads).

I remember being about 15 when my Mom read an article about broccoli’s anticancer powers. We were a pretty vegetable-y family already but she said, why aren’t we eating more broccoli? So we did. A lot, for a while. I remember feeling good that we found this out, and that it was awesome that we could actually prevent cancer by eating broccoli.

As a kid cancer scared me. It felt like a monster that dropped out of the sky to land on people who you love. I had grandparents who had had it, friends of the family, a young girl who I shared a hospital room with when I got my appendix out, and of course there was the movie Beaches (present day Beaches would have Bette juicing up a storm at that beach house, right?!). It just seemed random, awful and scary. But then there was this broccoli news…

Broccoli Caesar Salad

When I tell people what I do (if and when I elaborate past ‘Personal Chef’) I get some very mixed reactions. Sometimes it’s a conversation ender, many people tell me personal stories about cancer in their life, but for the most part, people tend to ask questions about the style of food I make. More than once I have been asked if I spend my days making broccoli salad.

In general the answer to that is no, each client has their own personalized eating plan that changes from one day to the next depending on the unpredictability of cancer treatment feelings. However, today the answer is yes, I am all about the broccoli salad.

Broccoli, the tree-like vegetable, all green and low glycemic, a proud member of the crushing cancer mafia family, Crucifer, is a bit of an anticancer stereotype, I get it. But if you really think about it, when was the last time you ate broccoli that wasn’t all wrapped up in Asian noodles? When was the last time you ate it in a ‘if there was no broccoli, this dish couldn’t happen’ kind of a way?
