Grain-free Falafel

Ingredients
For the Falafel:
  • 2 c Almonds, soaked overnight
  • 1 c Pumpkin Seeds, soaked overnight
  • 6 Green Onions, roughly chopped
  • 3 + Garlic cloves
  • ½ bunch Parsley, roughly chopped
  • 1 Tbsp Turmeric (dried) (if fresh, use 2 Tbsp)
  • 2 tsp Cumin, ground
  • 1 tsp Black Pepper, ground
  • 2 Tbsp Flax, freshly ground
  • 2 tsp Dulse
  • 1½ Lemon, juice and zest
  • ½ c Water
  • High Quality Sea Salt to taste (you won't need much, the dulse is salty)
  • 2 Tbsp Flax
For the Tabouli:
  • 4 Purple Kale Leaves, chopped
  • ½ bunch of Parsley, chopped
  • ¼ c Mint, chopped
  • ½ Cucumber, diced
  • 1 box Cherry Tomatoes, halved
  • 4 Green Onions, thinly sliced
  • ½ c Hemp Hearts
  • ½+ Garlic Clove, grated/minced
  • 1½ Lemons, juice and zest
  • 3 Tbsp Extra Virgin Olive Oil
For the Tzatziki:
  • 1 c Cashews, soaked overnight
  • ½ c Water
  • 2 Lemon, juice and zest
  • ½+ Garlic clove
  • ¼ Cucumber, diced small
  • 4 Green Onions, thinly sliced
  • ½ c Parsley, chopped
  • ¼ c Mint,chopped
  • ½ tsp Turmeric, dried (1 tsp if using fresh)
  • ¼ tsp Black Pepper, ground
  • Pinch of high quality Sea Salt
Instructions
For the falafel:
  1. Preheat the oven to 300*F (with convection, if you have the option).
  2. Drain and rinse the almonds and pumpkin seeds.
  3. Throw them into the food processor with everything else EXCEPT the ground flax.
  4. Blend, scrape, blend, scrape, until it is well blended and mixed.
  5. Add the flax and mix again until well blended (it will tighten up like play dough).
  6. Shape into small pucks.
  7. Lay out on a parchment-lined baking sheet, and bake for 30-45 minutes, size dependant (flipping them over halfway through). They should be dry and a little cracked on the outside, and preferably not browned.
For the Tabouli:
  1. Toss everything together.
For the Tzatziki:
  1. Drain and rinse the cashews.
  2. In a blender, blend the cashews, garlic, lemon juice and water together until very smooth.
  3. Pour into a bowl and stir in the rest of the ingredients.
