Bircher Muesli with Apples & Dried Apricots

Ingredients
  • ½ c Rolled Oats (not quick oats)
  • 1 Tbsp Hemp Hearts
  • 1 Tbsp Chia Seeds
  • 1 medium Apple (or Pear), grated
  • 1 tsp Lemon Juice
  • ¼ c dried Apricots (unsulphured)
  • ½ tsp Cinnamon
  • 1¼ c Almond Milk (or milk of your choice)
Instructions
  1. Combine all ingredients and let sit for at least 6 hours (or overnight).
  2. Store in the fridge for up to two days.
