Fresh Bok Choy Salad with Apple Sesame Dressing

Serves: 4-6
  • 6-8 medium Bok choy, cut lengthwise into 4-6 pieces
  • 1 Apple, cored and sliced
  • 4-6 Green Onions (green part only), thinly sliced
  • 2 c Radishes (daikon, red, watermelon, French, black or a variety), thinly sliced
  • ½ c Cilantro, chopped
  • 2 Tbsp Black Sesame Seeds
  • 1 small (or half of a medium/lg) Apple, cored
  • 4-6 Green Onions (white part only)
  • 1 Garlic Clove
  • 1 tsp Mustard
  • 2 tsp Tahini
  • 2 tsp Toasted Sesame Oil
  • 1 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp fresh Lemon Juice
  • Sea(weed) Salt, to taste
For the Salad:
  1. Layer all ingredients on a platter and drizzle the dressing over top (or toss all ingredients together with the dressing)
For the Dressing:
  1. Blend all ingredients together in a blender.
  2. Toss with salad or store, covered, in the fridge for up to five days.
