Fresh Bok Choy Salad with Apple Sesame Dressing

Serves: 4-6
- 6-8 medium Bok choy, cut lengthwise into 4-6 pieces
- 1 Apple, cored and sliced
- 4-6 Green Onions (green part only), thinly sliced
- 2 c Radishes (daikon, red, watermelon, French, black or a variety), thinly sliced
- ½ c Cilantro, chopped
- 2 Tbsp Black Sesame Seeds
- 1 small (or half of a medium/lg) Apple, cored
- 4-6 Green Onions (white part only)
- 1 Garlic Clove
- 1 tsp Mustard
- 2 tsp Tahini
- 2 tsp Toasted Sesame Oil
- 1 Tbsp Extra Virgin Olive Oil
- 2 Tbsp fresh Lemon Juice
- Sea(weed) Salt, to taste
- Layer all ingredients on a platter and drizzle the dressing over top (or toss all ingredients together with the dressing)
- Blend all ingredients together in a blender.
- Toss with salad or store, covered, in the fridge for up to five days.
