Fresh Radish Salad with Mint and Za'atar

  • 4 bunches of Radishes (30-40-ish), cut into 4 circles per radish (see pics)
  • Reserve the greens of one or two bunches, stack them up and roll them up and then slice them thinly (see picture)
  • ¼ c fresh Mint, torn up
  • 2 tsp Za'atar
  • 3 Tbsp Lemon Juice
  • 3 Tbsp fresh Mint
  • 3 Tbsp Extra Virgin Olive Oil
  • Sea(weed) Salt, to taste
Either toss everything except for the za'atar together and then sprinkle the za'atar on last
Mix the vinaigrette ingredients together first (this sort of pickles the mint and pulls out more flavour) and then toss with the rest of the salad, reserving the za'atar for sprinkling on last.
