'Honey' Mustard Roasted Brussels Sprouts

  • 1 kg Brussles Sprouts
  • 1 Tbsp Extra Virgin Coconut Oil
  • splash of Water (2 Tbsp?)
  • 2 Tbsp Grainy Mustard (or Broccoli Mustard)
  • 2 Medjool Dates, pitted
  • ⅓ c Extra Virgin Olive Oil
  • 1-2 Garlic Clove
  • 2 Tbs Lemon Juice
  • ¼-1/2c Parsley, chopped
  • Sea(weed) Salt to taste
  1. Preheat the oven to 350*F
  2. Wash the Brussels Sprouts, trim the ends off and cut them in half.
  3. On a parchment-lined baking sheet, toss the Brussels in the coconut oil, spread out on a baking sheet and add the splash of water.
  4. Bake for 20 minutes or until desired doneness.
  5. Meanwhile, blend the dates, mustard, olive oil lemon juice, garlic and salt until smooth.
  6. Toss with the warm Brussels sprouts and fresh parsley and serve.
  7. This goes well tossed with some lentils or beans if you want some added protein to make it more of a meal.
