Shaved Brussels Sprouts & Pomegranate Salad

  • 750g Brussels Sprouts, shaved (mandoline or food processor slicing or grating blade) (if you don't have a scale, it's about 30-40 pieces, or just weigh them at the grocery store)
  • 1 Pomegranate, seeded
  • 4-6 Green Onions, thinly sliced
  • ½ c Pecans (optional)
  • 2 Tbsp Lemon juice
  • 2 Tbsp Raw Apple Cider Vinegar
  • ¼ c Extra Virgin Olive Oil
  • 3 Tbsp Pomegranate Seeds (from same Pomegranate used for the salad)
  • Sea(weed) Salt to taste
For the Salad:
  1. Toss ingredients with the vinaigrette and adjust seasoning to taste
For the Vinaigrette:
  1. Combine all ingredients and using a fork, squish the pomegranate seeds against the side of the bowl to release some of their juices.
  2. Pour over salad and toss.
