750g Brussels Sprouts, shaved (mandoline or food processor slicing or grating blade) (if you don't have a scale, it's about 30-40 pieces, or just weigh them at the grocery store)
1 Pomegranate, seeded
4-6 Green Onions, thinly sliced
½ c Pecans (optional)
Vinaigrette:
2 Tbsp Lemon juice
2 Tbsp Raw Apple Cider Vinegar
¼ c Extra Virgin Olive Oil
3 Tbsp Pomegranate Seeds (from same Pomegranate used for the salad)
Sea(weed) Salt to taste
Instructions
For the Salad:
Toss ingredients with the vinaigrette and adjust seasoning to taste
For the Vinaigrette:
Combine all ingredients and using a fork, squish the pomegranate seeds against the side of the bowl to release some of their juices.
Pour over salad and toss.
