Whole Roasted Cauliflower with Curried Red Lentils

Ingredients
Lentil Curry:
  • 1½ c Red Lentils, soaked for 8-10 hours, drained and rinsed
  • 2 tsp Extra Virgin Coconut Oil
  • 1½ c Water
  • 1 Onion, diced
  • ½ Leek, diced
  • 5 Garlic cloves, minced
  • 1 Tbsp Ginger, minced
  • 1 tsp Fenugreek Leaves
  • 1 tsp dry Turmeric (2 tsp if using fresh)
  • 1 tsp Mustard Seeds
  • ½ tsp Garam Masala
  • 1 tsp Cumin seeds
  • ¼-1/2 tsp chili flakes or chili powder
  • ½ c Tomato Passata (purée) or three fresh roma tomatoes, diced
  • 2 c Coconut Milk
  • 2 Kombu sheets
  • 1 bunch fresh Cilantro, chopped
  • ½ Lemon, juiced
  • Sea(weed) Salt, to taste
  • Several Grinds of Black Pepper (to enhance turmeric absorption)
Cauliflower:
  • 1 Cauliflower head
  • 1 Tbsp Extra Virgin Coconut Oil
  • ½ tsp dry Turmeric (1 tsp if using fresh)
  • ¼ tsp Garam Masala
  • ½ tsp Cumin Seeds
  • Sea(weed) Salt and Black Pepper
Instructions
for the Lentils:
  1. Preheat the oven to 350*F
  2. On med/low heat in a heavy bottomed pot with a lid (dutch oven would be best), in the coconut oil with a splash of water, sweat the onion, garlic, leek and ginger until softened and translucent.
  3. Add the spices and continue to sauté for another minute.
  4. Add the lentils, water, tomato, coconut milk and kombu and bring to a boil.
  5. Place the spice-rubbed cauliflower (see below) in the middle of the curry, turn off the heat and put the lid (or foil) on top.
  6. Put the entire pot in the oven and bake for 30-40 minutes or until the cauliflower is tender.
  7. Take the lid off, squeeze some fresh lemon juice over top and sprinkle on the chopped cilantro.
  8. Serve with chopped fresh kale, grated carrots and beets, fermented veggies or just as is.
for the Cauliflower:
  1. Trim the bottom little bit off of the cauliflower (leave the greens on if they look good).
  2. Melt the coconut oil together with the spices, s&p.
  3. Pour it over top of the cauliflower and rub it all over.
  4. Place in the middle of the curry pot (see above) and continue with the recipe above.
