Wintery Spring Salad

Ingredients
For the Salad:
  • 4-5 Radishes, sliced
  • 4-5 Carrots, sliced
  • ½ bunch of Lacinato Kale, chopped
  • ½ small Red Cabbage, large diced
  • ½ bunch of Parsley, chopped
  • ½ bunch of Dill, chopped
  • 5 Green onions, (green part), sliced
  • 1 Pear, diced
  • 1 Lemon, zest
  • Hemp hearts
For the Dressing
  • ¼ c Cashews, soaked for 12 hours, drained and rinsed
  • 4 Green Onions (white part)
  • 1-4 Garlic cloves
  • 1 Lemon, Juice
  • ¼ c Raw Apple Cider Vinegar
  • ¼ Avocado
  • ½ bunch Parsley
  • ½ bunch Dill
  • ½-1 c Water
Instructions
For the Salad:
  1. Chop up the first half of the ingredients and toss them into a salad bowl (except for the hemp hearts)
For the Dressing:
  1. Blend the second half of the ingredients together in a blender, except for the water. Add the water as needed to create a nice consistency.
  2. Toss the dressing with the salad and sprinkle with hemp hearts
  3. Wrap leftovers in a collard green with avocado slices and quinoa
