Roasted Chickpea & Eggplant Tabouli

Roasted Chickpea & Eggplant Tabouli

The other day I put my 8 week old in her carrier in the hopes of shooting this salad. I had it all planned out, she got in, she fell asleep, everything was perfect until I then just walked around my apartment, kissing her head, taking pictures to send my husband (I know. she has her own drop box account…). Before I knew it, 45 minutes had passed and by the time I got it together she had woken up again and wanted to party. So we did.

Enter my Mother-in-law. She was visiting and wanted nothing more than uninterrupted playtime with her new granddaughter. This blog post (and our lunch) would not have happened without her.

Radicchio Salad with Roasted Acorn Squash & Hazelnuts

Radicchio Salad with Roasted Acorn Squash and Hazelnuts

My obsession with radicchio doesn’t appear to be going anywhere. Luckily, although she turns the colour of of one when she’s mad, my baby didn’t come out an actual radicchio, despite the amount that I ate while pregnant.

Besides its fresh, subtle bitterness, crisp lettuce-y texture and nostalgia it brings for the outdoor markets on the cobblestones of Rome, there’s another reason that we eat a lot of it in our house. Radicchio, despite its fragile-seeming texture, is robust and lasts for quite a while in your fridge.

‘Honey’ Mustard Roasted Brussels Sprouts

Honey Mustard Roasted Brussels Sprouts

I made/shot this recipe from start to finish with a reluctantly snoozing/slightly sweaty 4-week-old strapped to my front. I bribed her with a kilo of Brussels sprouts via breast milk for the next 24 hours. It totally worked. The point being, it’s a speedy recipe and a simple way to make Brussels a little more interesting and flavourful.

We use a roasting/steaming method to roast the sprouts. This just means that we throw a splash of water onto the roasting sheet. Without the water to create some steam, they take a lot longer to cook and can come out a little bit too tough.

Millet & Butternut Squash Polenta with Roasted Beets

Millet & Butternut Squash Polenta with Roasted Beets

I was picking up my husband from work one of those very icy nights in January when you wonder why you’re anywhere but home. I left early (because Vancouver + snow = unpredictable everything) and got there a bit early. I was parked and listening to the CBC and they had one of those calm-voiced announcers on talking about a Danish word/concept called ‘Hygge’.

I had never heard of it before, but sitting in my chilly car, around dinnertime at about 40 weeks pregnant, they had my full attention. As it turns out I want to live in Denmark. Hygge is something that we don’t have a direct translation for let alone a word for in the English language. Roughly, it means ‘cozy’ but it’s more than that.
